Palak (spinach) puri is an extremely easy and delicious way to include leafy vegetables into your toddler and kids’ meal. It works especially well for children who do not like to eat their vegetables. This recipe is another variation of our Palak Roti and for all these recipes, you can easily replace the veggies with those of your choice.
The ingredients used for this recipe are quite simple as well. We do like to add some hint of spices to this puri recipe mainly because of their digestive properties. Carom seeds and hing are super good for digestion and should be included in all our recipes. Instead of palak or spinach, you can add any mashed vegetables, such as beetroot, carrot, or methi.
These puris are usually eaten with a curry – our favorite being a spicy potato curry. You can also opt for aloo matar (peas), matar paneer, chana masala, or even dal as an accompaniment. Rinse spinach thoroughly.
Bring a pot of water to boil. Then add spinach to it. Cook for 5 minutes until the leaves wilt.
Then drain the water using a strainer. And let it cool for 2 mins. If you want you can immerse it into cold water - that just helps in retaining the green colour of the spinach.
Transfer leaves to a blender along with garlic & ginger. If making for an adult you can add the green chillies.
Puree the spinach to a smooth paste without adding any water. Keep it aside.
In another bowl, take wheat flour (atta) add ajwain, hing and salt.
Pour the spinach puree to the flour bowl.
Mix the spinach puree into the atta using your hands.
Knead the dough, add water only if required but use a tablespoon to add water. In the end apply little oil and knead. Cover and keep it aside for 5 - 10mins.
Divide the dough into small ball shape.
Heat oil in a kadai or pan. Keep the flame medium high.
With the help of rolling pin, roll the puri into a circle. It should neither be too thin nor too thick.
Now carefully slide the puri in hot oil.
Press the puri with a spatula to puff up than flip and cook the other side too until golden spot appears.
Remove on a paper towel. Similarly, roll and fry the remaining puris.
Serve hot
Palak or Spinach: Palak or spinach is extremely beneficial for our hair, skin and bones. Spinach is rich in iron, Vit A, Vit C, Vit K, folate and potassium. Wheat flour: Wheat flour or atta is a good source of protein and fiber. It does contain gluten, so may not be ideal for people suffering from gluten-sensitivity. Wheat atta is high on phosphorous, which works with the calcium in our body to build our bones. Wheat atta is also excellent in controlling the blood sugar levels of our body.
